Vegan Peanut Butter Granola
A crunchy granola topping made with peanut butter and maple syrup – perfect for smoothie bowls!
(You may swap for honey)
Preheat oven to 375 degrees.
Grease cookie sheet and set aside.
Pour all ingredients in large bowl and mix until well combined.
Lay mixture on cookie sheet and spread evenly.
Bake for 20 minutes, then flip granola.
Bake for an additional 20 minutes.
Allow granola to cool for 10-15 minutes, then put in air-tight container. The granola will get harder and more crunchy as it cools.
You may choose to add dried fruit, chocolate chips, coconut flakes, etc. to cooled granola.
Granola will get crunchier as it cools – do not cook longer because you fear it is not crunchy enough, as it will burn.
Quick oats work fine for this recipe!
